10-minute Mexican Bean Wraps
Serves 4, Total prep & cooking time 15 mins
Quick and easy self-assembled vegetarian wraps.
Ingredients:
1 small brown onion
1 red pepper
1 tbsp vegetable or sunflower oil
400g mixed beans (1 can)
400g tin of chopped tomatoes (1 can)
2 tbsp cajun seasoning
8 soft flour tortilla wraps
Avocado
Half a lime
Handful of grated cheese
Lettuce
Handful of chopped fresh parsley
Method:
1. Gently fry onions and peppers for 5 minutes until softened. Tip in beans, tomatoes and seasoning then simmer for 10 minutes, stirring occasionally.
2. Mash the avocado with the juice of half a lime.
3. Warm the wraps in the microwave on high for 20 seconds.
4. Take a large spoonful of the bean mixture and spread along the centre of each wrap. Add lettuce. Top with some grated cheese, guacamole & a sprinkling of parsley. Wrap and enjoy!
