15-Minute Drunken Noodles

Serves 2, Total time 15 minutes

A spicy and speedy dish, ready to eat in just 15 minutes. If, like me, you struggle with spice, adjust the chilli quantities as needed.

Ingredients:
200g dried wide rice noodles
2 tbsp sesame oil
3 cloves of garlic
2 birds eye chillies
1/2 brown onion
2 tsp light soy sauce
3 tbsp oyster sauce
3 tbsp dark soy sauce
2 tsp sugar

Method:
1. Mix the oyster sauce, dark soy sauce, sugar and 1 tbsp water together to make your sauce. Set aside.
2. Cook the noodles in a saucepan.
3. Heat oil until smoking in a wok or skillet then add the garlic and chilli. Cook for 20 seconds, stirring constantly. Add the onion and light soy sauce and sauté for a few minutes.
4. Add the noodles and sauce into the saucepan and toss well to mix it all together. Add the thai basil for the last 30 seconds.
5. Serve.
